Made mashed potatoes and turnips with rosemary. I cut the turnips and potatoes into 1-inch chunks and boiled them for about 8-10 minutes until tender. I mashed everything up with some vegetable broth, vegan butter, rosemary, and a little salt and pepper. We ate this for dinner, along with a nice, big salad of lettuce mix, radishes, and scallions. Saved the leftover potato/turnip mash in the fridge to eat later in the week.

While the potatoes were boiling, I made a batch of fresh juice with the radish and turnip greens along with some fruits and veggies we had in the fridge, including some carrots, cucumber, apples, and a lemon. Radish and turnip greens aren’t my favorite things to eat, but I can easily drink them in a juice.

NOTE: Juicing isn’t for everyone. A good juicer is expensive and they are kind of a pain to clean. I like ours, but I wouldn’t rush out and buy one just because you join a CSA.
